It’s upon us at last! That sticky sweet time of year when eating chocolate and dessert is not only allowed, but it’s actively encouraged. Required, in fact, if we’re being true to the spirit of Easter. At Quattro Foods we absolutely love this time of year. The blossom is out, the promise of summer is tantalising, but the best bit is simply dessert. We can’t wait to celebrate with tasty treats and delectable desserts. And we’re all about sharing the love. Here are some of our favourite recipes for decadent bakes to make your Easter the sweetest yet.
Bunny Cookies 🐰
Ingredients
- 3 cups plain flour
- 1 cup butter
- 0.5 tsp baking powder
- 1 tsp lemon zest
- Pinch of salt
- 0.75 cups granulated sugar
- 1 egg
- 1.5 tsp vanilla essence
- Royal icing and mini smarties for decorating
Method
Whisk together the flour, baking powder and salt and set aside. Beat the softened butter, sugar, and lemon zest until light and fluffy, then add the egg and vanilla. Gradually add the flour mixture. Shape the dough into round buns and flatten. Chill until firm, line baking sheets with parchment, cut out cookies in the shape of bunnies and bake at 180 degrees until light golden brown, then cool before decorating.
Rainbow meringues 🧁
Ingredients for meringues
- 3 egg whites
- Pinch of salt
- 0.5 cup caster sugar
- Food colouring (pink, purple, blue, whatever you fancy)
Ingredients for frosting
- 6 oz cream cheese
- 0.75 cup icing sugar
- 6 tbsp butter
- 0.5 tsp vanilla essence
Method
Use the whisk attachment of an electric mixer, beat the egg whites for 5 mins and add the salt. Increase the speed and gradually add the sugar until you have stiff, glossy peaks. In separate bowls, mix a dollop of the mixture with a drop of food colouring. Use a piping bag with a star tip to pipe the meringues onto baking sheets and bake for an hour. Leave to cool and make the frosting by beating the cream cheese and icing sugar until smooth and adding the vanilla and butter and sandwiching the meringues together with the frosting.
Blondies 🍪
Ingredients
- 1.25 cups plain flour
- 0.5 tsp baking powder
- 1 egg
- Pinch of salt
- 0.5 cups butter
- 0.5 cups muscovado sugar
- 0.25 cups granulated sugar
Method
Whisk together the flour, baking powder and salt. Beat the butter, sugars and egg and gradually add the flour mixture. Spread into a baking dish and bake for 20 minutes. Leave to cool and cut into squares.
