Can we let you into a sweet potato secret? February 22nd is one of our favourite days of the year. Cook a Sweet Potato Day holds a special place in our hearts (and stomachs). In the households of the Quattro staff, these delicious orange spuds are the most popular food, and we’ve concocted our very own spectacular ways of cooking them.

Roasted sweet potato wedges
This literally couldn’t be easier, or more delicious.
Peel three or four (or five, six or more!) sweet potatoes and slice them lengthways into strips, kind of like fat chips. Place them on a lined oven dish, sprinkle liberally with salt and pepper and drizzle a good glug of olive oil over the wedges. Then place in a hot oven for about 45 mins until they’re crispy and a little sticky on the outside and beautifully fluffy on the inside. Serve and observe! Everyone around the table will be licking their fingers and exclaiming in delight.
Sweet potato and sweetcorn chowder
You’ll love this hearty winter soup full of flavour and texture. It’s become a lunch staple at Quattro HQ thanks to its filling and warming deliciousness.
Peel and cube three sweet potatoes (or more, if you’ve got a really big pot!). Fry an onion and two cloves of garlic in oil at the bottom of the soup pot.
Add the sweet potato and 2 tins of sweetcorn and let them sweat for a couple of minutes before adding about 2 pints of boiling water. Let it bubble away for 15-20 minutes or until the sweet potatoes are soft and then add a vegetable stock cube and liquidise into a soup with a hand blender. But don’t fully liquidise it, keep some lumpy bits of spud swimming around. Add two more tins of sweetcorn, season with salt and pepper to taste and let the soup boil for a further ten minutes. Serve with warm, crusty bread for a healthy, filling and deeply delicious dinner.

Where did it originate? We’re not 100% sure. It’s either from Central or South America. In Central America, sweet potatoes were domesticated at least 5,000 years ago. Peruvian sweet potato remnants dating as far back as 8,000 BC have been found in South America.
Nowadays, our suppliers partner with farmers in Almeria, Spain as well as South America, so we get these delicious spuds all year round and in abundance. Just heaven!
